This was a test to see what effect a breakfast consisting of Paleo Pancakes, Sweet Potato, an Egg and Bacon would have on my system. I did not think my glucose level would change that much. But what surprised me was how much it changed, and then also how quickly I recovered.

I was surprised at how high the glucose went, just 1 hour after the meal. I’m not sure what caused it, the pancakes or the sweet potato, or both. I’ll have to do another test to isolate which spiked the glucose the most.
Dr Boz Ratio: I went from a very healthy Dr Boz ratio of 42, probably well in the autograph range, to a very high value of 234! Clearly out of ketosis and clearly not in autophagy after this meal.
The GKI ratio also showed I was in a very good level of ketosis before the meal, but jumped well out of any ketosis range after the meal.
But what was surprising was how quickly the glucose recovered after 2 hours. Maybe I was going into a sugar crash at that point.
I could not take another reading after 2 hours, and then I ended up eating other foods.
Conclusion
What this shows me is one of these foods (not the egg or bacon) clearly shot up my glucose levels in a very short amount of time. I will need to do another test isolating each of the foods to see which causes the greatest effect on my sugar levels.
