For this test, I wanted to test what these “keto friendly” cookies would do to my keytones and glucose.
I started the test from a fasted state, not having eaten anything for 18 hrs.

Conclusion
These raised my glucose level a bit, but less than I thought they would, and the keytones did not get as affected as I thought it would.
After 2 hrs, the glucose level returned to the pre-test levels, and keytones were still barely affected.
Recipe
1/4 c Lalcanto Golden Monkfruit Sweetener
1/2 c Coconut Oil (room temp)
1 tsp Vanilla
1 Egg
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 c Cocoa Powder
1 c Almond Flour
1/2 c Lakanto Chocolate Chips
