Panettone is a soft butter rich cake, with lots of carbs and lots of sugars.
I performed 2 tests, since it was so good, and was surprised at the results.
First the nutrition information:
Based on the serving size, the 2 tests were probably double the single serving size, which would be about 76g of carbs and 42g of sugars.
Test Results
Date | Time | Glucose (mg/dl) | Keytone | Dr Boz Ratio | Comments |

Conclusion
- The effect on my glucose and keytones much worse than I expected.
- While my glucose level was able to recover quickly, my keytone level remained very low, even after 3 hrs.
- I would not recommend having Panettone often, and if I do have it, I will probably need to wait 24hrs to be able to process all the carbs and sugars.

Based on the test results, it appears that consuming Panettone had a significant impact on glucose levels, causing a spike that took some time to recover. However, the ketone levels remained relatively low throughout the testing period, even after 3 hours.
The individual who conducted the test concluded that the effect of Panettone on glucose and ketone levels was worse than expected. They recommend not consuming Panettone frequently and suggest waiting for 24 hours to allow the body to process the high amounts of carbs and sugars present in Panettone.
