This test was conducted by going to a nice Italian restaurant in the Denver area called Nonas Italian Bistro.
I started off this test by fasting for 28 hours since my last meal, and wanted to see how long it would take for me to recover from the meal.

Reviewing the Ratios from this test:
Dr Boz Ratio:
The Dr Boz Ratio is a value taken from Dr Boz. Details of how the ratio is calculated can be found here. It is calculated using the formula Glucose / Keytone = Dr Boz Ratio.

For this meal, we can see that the Dr Boz ratio started under the level where my immune system was having benefits, but after the meal, things were much different, I had jumped well out of any autophagy benefits I had earlier. Even by the following morning, I still had not recovered to the pre-test levels.
GKI Ratio:

From the GKI ratio, we can see before the test, I was in the therapeutic level of ketosis, but after the meal, I was clearly out of ketosis, and it would take me some time to recover and get back into ketosis. By the following morning the GKI ratio showed that I was in moderate ketosis.
Conclusion
This test was interesting in that even with this relatively keto friendly main meal, I was surprised to find that I was kicked out of ketosis and for how long. The slice of bread and potatoes probably were the culprits here. It would be interesting to do this same test, but skipping the bread and potatoes and see how the results differ.
One other note, after this test, I found that I was still hungry, probably because this was the only meal I had that day. So the following morning, I had an omelet and bacon breakfast. See the results of that test to see how my body continued to try to recover.
